Strawberry Popsicles
These Strawberry Popsicles are made with two simple ingredients, strawberries and honey and they take just minutes to make. You simply need a blender and a popsicle mold. The perfect hot weather treat for kids!

Summer is here and the kids are home. They will be asking for cold treats on these hot summer days, and I can’t think of a more refreshing hot weather treat than a frozen one.
Back in the day, my mom would mix up Kool Aid and pour it into cheap popsicle molds or sometimes ice trays for us to eat on a hot day. We didn’t have air conditioning either, so any cold treat tasted good!

Today, you can buy really nice popsicle molds on Amazon. I love mine. You can even buy the little individual popsicle bags too.
Two Ingredients
There are a zillion recipes for popsicles out there, but today I’m sharing a very simple recipe with two simple ingredients…strawberries and honey.

Frozen Strawberries – I used frozen unsweetened strawberries in this recipe. You can use sweetened ones if you prefer, but you might want to reduce the amount of honey.
Honey – I used honey from my neighbor Darci’s bee hives for this recipe. I first used 1/3 cup. However they were still pretty tart, so I increased it to 1/2 cup. You need to taste it and judge for yourself if you want it any sweeter.
How to Make

Add the strawberries, water and honey to a blender. Blend until very smooth. If prefer to have pieces of strawberries in your popsicles, you can simply pulse a couple times.

- Pour the strawberry mixture into the popsicle molds, allowing room for the popsicle sticks. Don’t over fill.
- Place the lid on and insert the wooden sticks. I place the sticks all the way down, but you can leave more of the stick showing if you prefer, especially if small children will be holding them.
- Place the mold on a level shelf in your freezer. Allow the popsicles to freeze for at least 4 hours.

You can slide each popsicle into a popsicle bag if you prefer, before returning them to the freezer. They are sold on Amazon. If you don’t have popsicle bags, place each one in a sandwich bag and freeze. You can also stack them with a piece of waxed paper or parchment paper between them, and place in a freezer safe air tight container.
Options
Use blueberries, blackberries, pineapple, or peaches. You can basically use any fruit in popsicles. You can also add milk products instead of water such as coconut milk or yogurt, turning them into creamsicles.

- 2 (16 ounce) frozen unsweetened strawberries, thawed
- 1/2 cup water
- 1/2 cup honey
You will need a popsicle mold and 10 wooden popsicle sticks.
Instructions
- Add the strawberries, water and honey to a blender. Blend until very smooth. If prefer to have pieces of strawberries in your popsicles, you can simply pulse just until blended.
- Pour the strawberry mixture into the popsicle molds, allowing room for the popsicle sticks. Don’t over fill.
- Place the lid on and insert the wooden sticks. I place the sticks all the way down, but you can leave more of the stick showing if you prefer, especially if small children will be holding them.
- Place the mold on a level shelf in your freezer. Allow the popsicles to freeze for at least 4 hours.
- Remove the popsicle mold from the freezer. Gently pour some very warm water over the bottom of the mold and slowly wiggle and pull out each popsicle.
- If the popsicles are slightly soft, place them on a parchment lined baking sheet, and return to the freezer for a few minutes.
- You can slide each popsicle into a popsicle bag if you prefer, before returning them to the freezer. They are sold on Amazon. If you don’t have popsicle bags, place each one in a sandwich bag and freeze. You can also stack them with a piece of waxed paper or parchment paper between them, and place in a freezer safe air tight container.
- Properly sealed popsicles can be left in the freezer for up to three months.
Notes
- If you use frozen sweetened strawberries or fresh strawberries, you might not have to use the entire 1/2 cup of honey. Do a taste test before adding all of it.
