Okay, just one more peach recipe while fresh peaches are in season.  I stopped by my local farmers’ market this week and scooped up another 6-7 fresh peaches while they were still available.  I contemplated all the way home on what I wanted to make with my sweet juicy purchase.  It was a big decision between this peach crumble pie and Peaches and Cream Ice Cream, but after a very long debate, the pie won.

How did i make a perfect peach crumble pie?

Well, for starters…I wanted the peaches to be the main star in the recipe, but I also wanted to give the peaches a slightly warm spicy touch.  That was easy.  I added 1/2 teaspoon of cinnamon to the pie filling.  Not so much that it overpowered the flavor of the peaches, but just enough to add warmth.  Cinnamon is a great complement to stone fruit of any kind.

The second ingredient that greatly complements both peaches and cinnamon…brown sugar.  Yes, brown sugar instead of white sugar.  Brown sugar adds caramel-like notes to the peaches.

The peach crumble had to have flavor too.  Not just some crumbly bland flour tasting mixture.  Also, a crumble with a little crunch.  The solution…butter, brown sugar, cinnamon and pecans.  Yes pecans too!

Filling Ingredients

  • 1 unbaked pie shell, 9 inch deep dish
  • 4 cups fresh peaches, peeled and sliced into thick slices
  • 1/2 cup light brown sugar, packed
  • 1 1/2 tablespoons cornstarch

Crumb topping ingredients

  • 1/2 stick unsalted butter, softened
  • 1/2 cup all purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup pecans, coarsely chopped, optional

Pro Tips for Making This recipe

  • Buy fresh peaches that are firm but not green.  Try to avoid peaches with bruises or soft spots.  If they are a little bit green, place them on a window sill for a couple of days.  Allow them to ripen some before using, or they won’t be sweet and juicy.
  • Slice peaches into thick slices when baking in a pie.  Peaches become very soft when baked.
  • Add spices such as cinnamon, nutmeg, ginger or black pepper (yes black pepper) to the pie filling to enhance the peach flavor.  These spices are a great complement to stone fruit.
  • Add brown sugar to the filling and crumb topping for notes of caramel.  Brown sugar is a great complement to peaches and warm spices.
  • Add some nuts to the crumb topping for some added crunch.  Pecans are my favorite but walnuts are great also.

FOR THE FILLING

  • 1 unbaked pie shell, 9 inch deep dish
  • 4 cups fresh peaches, peeled and sliced into thick slices
  • 1/2 cup light brown sugar, packed
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon cinnamon

FOR THE CRUMB TOPPING

  • 1/2 stick unsalted butter, softened
  • 1/2 cup all purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup pecans, coarsely chopped, optional


Instructions

Preheat oven to 375 degrees.

FOR THE FILLING

  1. Add the sliced peaches to a large bowl and set aside.
  2. In a small bowl, mix together the brown sugar, cornstarch, and cinnamon.
  3. Sprinkle the dry mixture over the peaches and using a spatula, gently turn and coat all the peaches with the dry mixture.
  4. Transfer the peach filling to the unbaked pie shell and set aside.

FOR THE CRUMB TOPPING

  1. In a medium bowl, using your hands, mix together the butter, flour, brown sugar, salt and cinnamon, until thoroughly mixed together.  Mixture should form small crumbly clumps.  Mix in the pecans, if using.
  2.  Sprinkle the crumb topping evenly over the peach pie filling, making sure you spread the crumbs to the edges.
  3. Place pie on a rimmed baking sheet and bake until the crumb topping is golden brown and the juices are bubbling, approximately 1 hour and 15 minutes.
  4. Transfer pie to a wire rack to cool.

Serve pie warm with a scoop of ice cream!  Refrigerate leftovers.
