For the Meatloaf
- 1 1/2 pounds ground chuck
- 2 large eggs, slightly beaten
- 1/3 cup milk
- 1 medium onion, diced small
- 1 teaspoon salt
- 1 teaspoon pepper
- 2/3 cup finely crushed saltine crackers or store bought bread crumbs
For the Glaze
- 1 1/2 cups ketchup
- 1 tablespoon Worcestershire sauce
- 1/8 teaspoon pepper
- 3/4 cup light or dark brown sugar, packed
Instructions
- Preheat oven to 350 degrees.
For the Meatloaf
- Spray an oblong baking dish, such as an 8 X 11 inch, with non stick cooking spray.
- Mix all ingredients together in a large bowl, (I use my hands). Do not over mix, or meat will become tough when baked.
- Shape mixture into a loaf and place in prepared baking dish and set aside.
For the Glaze
- Combine ketchup, pepper and brown sugar in a small pan. Stir and heat over medium heat, just until sugar has dissolved.
- Brush about 1/2 of the sauce over the top of the meatloaf mixture. Reserve the remaining sauce for brushing over the baked meatloaf or serving on the side.
- Place meatloaf on a middle oven rack and bake for about one hour or until meat temperature reaches 160 degrees on a meat thermometer. Allow meatloaf to rest for about ten minutes before slicing.
- Brush with additional sauce if desired or serve on the side.
- Refrigerate leftovers.
