Oven Roasted Strawberries

Description

These oven roasted strawberries are so full-flavored and sweet, and they are delicious served over your favorite breakfast or dessert. They also take no time to make.


Ingredients

  • 2 pounds (32 ounces) fresh strawberries
  • 1/2 cup granulated sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees. 
  2. Rinse and drain the strawberries and remove stems. Leave strawberries whole, unless they are really large. They will cook down some in the oven. 
  3. Transfer the strawberries to a shallow 2-quart baking dish. Sprinkle the sugar, salt and vanilla over the strawberries and toss with a spatula or spoon to evenly coat the strawberries with the sugar. 
  4. Bake for 10 minutes and stir them. Bake for an additional 10 minutes or until the strawberries are soft and very juicy. Extra firm strawberries will take a little longer.
  5. Use immediately, or transfer to a sealed glass jar and refrigerate for one day. After one day, they will start to break down and become really mushy.
  6. Serve warm over ice cream, oatmeal or pancakes, or add to your yogurt.
